Dutch Baby
This recipe dates back to the early 1900's from Seattle's Manca's family restaurant. The one-dish pancake (actually like a giant Yorkshire Pudding) preps in just 5 minutes and only takes 20 - 25 minutes to bake. Have everyone seated at the table as you bring the baby out of the oven as the result is pretty spectacular looking but will start to flatten out quickly.
Ingredients:
1/4 cup butter or margarine
3 large eggs
3/4 cups all-purpose flour
3/4 cups whole milk
2 each lemon's cut into quarters
1/2 cup powdered sugar (for sifting)
Instructions:
- Step 1Preheat the oven to 425FSelect a pan or dish that will hold between 2-3 quarts.
- Step 2Place the butter or margarine in the pan/dish and set in the preheated oven.
- Step 3Work quickly to make the batter. Place the eggs in a blender and blend on high for 1 minute.
- Step 4IngredientsKeep motor running and slowly add the milk, then the flour and continue to blend for 30 seconds. You can also use a bowl and a hand mixer.
- Step 5Immediately pour the batter into the hot pan/dish over the melted butter. Bake about 20 - 25 minutes until puffed up and golden and batter is cooked through.
- Step 1Bring to the table to serve. Squeeze fresh lemon all over the pancake and sift powdered sugar over the top. Cut into quarters and serve with extra sugar and lemon wedges.
