Cheese Fondue With Truffles (Fondue aux Truffles)



Ingredients:

14 ounces Fontina cheese
2 cups milk
7 tablespoons butter
8 egg yolks
1 each white pepper to taste
1 fresh white truffle, sliced thin (use a truffle shaver)


Instructions:

  1. Step 1
    Place the cheese in a bowl, cover with milk and let it soak for several hours.  ** Prep time does not include soaking time.
  2. Step 2
    Prepare Fondue
    You can prepare your fondue in a double boiler on a cook top or use your fondue pot.
  3. Step 3
    Place half the butter in the double boiler (or fondue pot) together with the egg yolks, cheese and milk.  Melt over low hear, mixing continuously with a whisk.  The cheese with turn into a thick cream; add a little white pepper at this point.
  4. Step 4
    Cut he remaining butter into small pieces and add them to the cheeses mixture.  Stir for a few moments and sere at once, sprinkle with the slices of truffle.
